No sunset is ever really complete without a cocktail. With balmy weather upping the ante on sundown sips, we’re dreaming of one less ordinary: the kind of weekend-in-a-glass concoction that’s best enjoyed under rustling palms on tropical shores, servedyou guessed itin a coconut. This refreshing, colada-inspired crush won our hearts with a splash of rum, a dash of pineapple juice and count-the-ways coconut.
WHAT YOU’LL NEED1 coconut
1 ½ ounces rum
½ cup coconut juice
2 teaspoons coconut milk
2 teaspoons pineapple juice
1 teaspoon simple syrup
¼ teaspoon ginger
Pinch cinnamon
Ice
HOW TO MAKE IT
Open the coconut (we watched a how-to on YouTubeit’s easy, we promise) and drain out the water (save it for tomorrow morning’s smoothie, perhaps?). Add all other ingredients to a blender and blend until desired consistency is reached. Serve in the emptied coconut and top with another pinch of cinnamon.
