Farm-Fresh Friday: Sweet Pea Cocktail

Some call it June, but we like to refer to this, the sweetest of summer months, as the official start of market season. From roadside stands bursting with bright colors to community gardens aplenty, we can’t get enough of the tasty treats filling our produce baskets. Add to that an abiding love of freshly prepared potables, and you have our latest series of farmers’ market-inspired sips. To kick things off, we’re toasting the tail end of pea seasonand celebrating the versatility of cucumber and celerywith this bountiful cocktail. We’d say this counts as at least a full serving of vegetables, wouldn’t you agree?

WHAT YOU’LL NEED for two cocktails 6-7 English or sugar snap pea pods

10-12 pieces diced cucumber

2-3 celery stalks, juiced or finely puréed

½ lime, juiced

1 teaspoon sugar

2 ounces quality gin

1 ounce St. Germain liqueur

Club soda

Pea shoots

HOW TO MAKE IT
Separate the peas from their pods and add both to a shaker, along with diced cucumber, sugar and lime juice. Muddle with a spoon or fork to extract as much liquid as possible. Add gin, St. Germain, celery juice and ice, and shake until outside is frosty. Fill a coupe with ice and add ¾ of the mixture. Top with club soda and garnish with cucumber medallions and pea shoots.
